Gasthof Hinterbrühl Reopens Under New Management, Promises “Munich’s Most Beautiful Beer Garden”
Munich, April 9, 2026 – The traditional Gasthof Hinterbrühl by the lake in Solln has reopened its doors under the new management of the Wagner family, who aim to establish it as home to “Munich’s most beautiful beer garden.” The soft opening took place in late March, following a three-month renovation period. The Wagners, who have also operated the Spieglwirt in Moosach since 2022, are bringing a fresh approach to the historic inn, which dates back to 1909 and is a popular destination, especially during the summer.
Extensive Renovations and a Focus on Bavarian-Austrian Cuisine
Marcus and Edith Wagner, along with their son Kilian, took over the Gasthof from previous owner Gerry Haberl, who had managed it since 2011. The renovation focused on modernizing the facilities while adhering to strict monument protection guidelines. Marcus Wagner indicated that extensive refurbishments were necessary, particularly for the restrooms and the kitchen, which has been equipped with state-of-the-art technology.
The kitchen, now under the leadership of 25-year-old Kilian Wagner, is expected to be busy. The interior of the Gasthof can accommodate 300 guests, with the banquet hall alone seating 140. Early inquiries for weddings have already been received. The terrace, which will soon feature palm and olive trees to create a “holiday feeling,” will offer an additional 350 seats.
Kilian Wagner, who trained at Heide Volm in Planegg, has curated a menu with his father, also a trained chef, that primarily features Bavarian-Austrian classics. Dishes include roast pork with dark beer sauce, Käsespätzle with Emmentaler and mountain cheese, as well as salad bowls and various burgers. The vegetarian burger with a vegetable patty is reportedly “very well received.”
Kilian Wagner takes particular pride in his cured and smoked char, as well as the Zwiebelrostbraten (roasted onion steak) prepared according to his father’s recipe. The char, served with quail egg on beef tartare and garlic-marinated shrimp, forms a unique appetizer. Unlike the smaller Spieglwirt, the tartare here is minced rather than cut. Guests can choose to prepare their own tartare or order it pre-mixed on toasted King Ludwig bread.
Homemade Quality and Affordable Prices
Kilian Wagner emphasized that the Gasthof Hinterbrühl prioritizes homemade dishes, with “nothing coming from a bucket” – neither sauces nor cabbage or potato salads. Despite this commitment to quality, prices are intended to remain affordable for Munich standards. In addition to a weekly menu and, eventually, a daily menu, there will be a changing lunch special for 10.90 Euros on weekdays until 2 PM. On Mondays, the Schäufele (pork shoulder) with dumplings and an Augustiner vom Fass (draft beer) will be available for 20.50 Euros.
Switch to Augustiner Beer and Future Plans for the Beer Garden
A significant change is the switch from Hacker-Pschorr to Augustiner-Helles beer. Marcus Wagner explained that his positive experiences working with Augustiner at the Spieglwirt and previously at the Hofgut in Golfclub Olching made the decision a natural one for Gasthof Hinterbrühl. The Weißbier (wheat beer) will be sourced from Schlossbrauerei König Ludwig, as the establishment is not tied to a single brewery.
A half-liter of Augustiner from the wooden barrel now costs 4.60 Euros, while Weißbier is 4.80 Euros. The price of beer in the self-service beer garden remains undisclosed for now, as do the specific offerings at the bar, which is still under construction. Guests are permitted to bring their own Brotzeit (snacks) to the beer garden, unlike the terrace. Additionally, huts will offer traditional Bavarian fare such as Steckerlfisch (grilled fish on a stick) and Hinterbrühler Batzter (homemade Obazda, a Bavarian cheese delicacy).
The full beer garden, designed to accommodate up to 1,000 guests, is expected to be completed by early May. Marcus Wagner anticipates the installation of the Augustiner beer benches, complete with backrests, by then. An opening celebration is planned to mark the new beginning, though a specific date has not yet been set. With the old chestnut trees beginning to sprout, the Wagners hope to reclaim the title of “most beautiful beer garden in the city or even Upper Bavaria,” a distinction the Gasthof held in 2012 and 2013.
